~ Simple Apple Cake ~
2 eggs 1/2 cup oil 1 1/2 cups white sugar 2 teaspoons cinnamon 1/2 teaspoon salt 1 cup whole wheat flour 1 cup all purpose flour 1 teaspoon baking soda 3 apples - cored, peeled, and diced
Beat the eggs and oil in a mixing bowl. Add sugar and beat. To the frothy mixture add the cinammon, salt, flour, and baking soda. Mix until combined. Stir in the apples. The mixture will be very stiff.
Spread the batter into a greased 9 X 13 cake pan. I used two small, circle cake pans so they came out thin. I solved this problem by stacking two pieces together. Bake at 350 for 40 minutes (or 30 if you use the smaller pans).
You can sprinkle powdered sugar on top of the finished cakes if you wish. I thought the cake was so delicious without any embellishments, although I do think a bit of whipped cream or vanilla ice cream would have gone nicely.
