1 cup sugar 1/2 cup oil 1 cup (2 medium) mashed ripe bananas 1/2 cup low fat plain yogurt 1 teaspoon vanilla 2 eggs 1 cup all purpose flour 1 cup whole wheat flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup fresh or frozen blueberries (do not thaw)
Heat oven to 350F. Grease and flour bottoms only of three 6x3 1/2-inch loaf pans.* In large bowl, combine sugar and oil; beat well. Add bananas, yougurt, vanilla and eggs; blend well. Add flour, baking soda and salt; stir just until dry ingredients are moistened. Gently stir in blueberries. Pour into greased and floured pans. Bake at 350F. for 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pans. Cool completely. Wrap tightly and store in refrigerator. 3 (12 slice) loaves.
TIP: *Recipe can be baked in one 9x5-inch loaf pan. Grease and flour bottom only of pan. Bake at 350F. for 60 to 70 minutes.

I saw you mention it on Facebook and I'm glad you posted it here! Looks tasty and fairly healthy. I bet you could substitute at least half of the oil for unsweetened applesauce.
