Recalling the days of tasting my Mom's & Grammy's put up meats, fruits, preserves & veggies.
Mom didn't have a wide reportoire but what she made was excellent.
Grammy Way, born & raised, at the turn of the last century, on a farm in Kansas was just an amazing cook in the Penn Dutch & Welsh style of her forebears.
This eazy peazy recipe is from one of Marcia Adams' cookbooks.
Experiment w/the sweetening. We like dark brown sugar w/this or try half honey & half brown sugar.
Dark amber maple syrup is good, too.
Also like to change up the spices.
Love to put this into homemade pound or bundt cake or Danish as well as use it on toast. Nice in Thumbprint or oatmeal cookies or bars/squares.
Good with meat--esp. pork--and for a cheese platter.
Crockpot Apple Butter4 pints
1. 7 cups applesauce, homemade is easy & best but I won't tell if you slip in an UNsweetened store-bought type; it still works just fine.
2. 2 cups GOOD apple cider
3. 1 1/2 cups honey--or see above, substitutes or combos are great
4. 1 teaspoon ground cinnamon
5. 1/2 tsp ground cloves
6. 1/2 tsp ground allspice
Dump everything into the crock pot.
Depending on yr CP, cook on low for 12-15 hours.
Use the hot water bath method for canning.
While hot, pack into 4 hot pint jars.
Process in hot water bath for 10 minutes.
Be sure to figure the timing AFTER the water has come to a rowdy boil.
