Mr & Mrs Swarr ran a wonderful rural, stone built B&B for years on a farm that has been in Russell's family for many generations.
Our small family enjoyed two very special trips there before the Swarr's retired.
The Swarr's tree shaded large Pa stone house was one of the few B&Bs to accept children & what a wonderful spot for a child it was!
Chicken coops, kitties, dogs, vegetable & herb gardens. Lots of well kept lawn to play.
Both elderly Swarr's loved children & were enchanting with them!
:PAnyway, Gladys' breakfasts were served family style at a table that easily sat 14 & in an old kitchen replete w/huge hearth cooking place & lots of light pouring through the deep set, lace curtained windows.
Her table groaned with hearty, wonderful Penn Dutch favorites & homemade jams & preserves, their own eggs & butter, seasonal fruits & veggies.
She was generous with her recipes & a true delight.
Will post other recipes for this same dish. All are good, but Mrs Swarr's is my sentimental favorite!
Baked Oatmeal
Set oven to 350F. Grease--or spray coat--a casserole dish.
1. 1/2 cup vegetable oil
2. 2 large sized eggs
3. 3/4 cup sugar I have substituted half of this with brown sugar
4. 3 cups quick oats oatmeal--Mrs Swarr was insistent on the 'quick'
5. 2 tsp baking powder
6. 1 tsp salt
7. 1 cup whole milk
Combine: #1 - #3.
Add: #4 - #7
Pour into casserole dish, bake for about 45 minutes.
Serve with fresh fruit &/or milk or light cream.
Optional: 1/2 tsp cinnamon, 1/2 cup plumped raisins, dates etc;
1/2 tsp vanilla; 1/4 tsp allspice or nutmeg or 1/2 nuts (I put the nuts in water--or juice--to cover & nuke for about 45 seconds, drain & use)
