1 can of coconut milk 1 tablespoon brown sugar 1 tablespoon soy sauce 1 onion, chopped 1 red pepper, chopped 1 green pepper, chopped 1 small eggplant, chopped 2-4 sweet potatoes, peeled and chopped (depending on size of crock use less or more potatoes) 3-4 boneless skinless chicken 4 tablespoons of curry powder (I have since added an additional one after tweaking the recipe a few times, do it to taste) 1/2 can tomato paste 1 teaspoon coriander 1 teaspoon cumin 2 tablespoons honey 1 inch of ginger, peeled and grated 1 can garbonzo beans, drained and rinsed
Mix spices, milk, tom paste, sugar and honey in bottom of crock pot. Whisk together until combined. Coat chicken in the sauce. Cover with the veggies and beans. Cook on High 5 1/2 hours.

Yep I usually make white rice or add some toasted coconut to my rice for this! it's really good!!
