~ Blackberry Balsamic Chicken ~
* This is one of my favorite chicken recipes - ever. So easy, tasty, and healthy. It comes from the cookbook Saving Dinner by Leanne Ely.
Ingredients
1 T. oil 1/2 c. chopped red onion (yellow onion is fine if you don't have red) salt and pepper to taste 1/2 tsp. dried thyme 4 boneless, skinless chicken breast halves 1/3 c. seedless blackberry preserves 2 T. balsamic vinegar
Heat oil in a large skillet and add onion. Saute till translucent. Sprinkle the spices over the chicken and add to skillet. Saute about 6 minutes each side or until done. Remove chicken from skillet and keep warm. Reduce heat and add the preserves and vinegar, stirring constantly until the preserves melt. Spoon the sauce over chicken to serve.
