~ Pumpkin Pancakes ~
*This recipe makes a double batch. I also changed up the original a bit to make it healthier, but you can easily replace the wheat flour with white flour and leave out the bran flakes.
1 cup white flour 1 cup wheat flour 1/4 cup bran flakes 2 tablespoons sugar 4 teaspoons baking powder 2 eggs 2 cups milk 4 tablespoons oil 1 cup pumpkin 1 teaspoon cinnamon
Mix all ingredients. I just throw everything together and mix. I ate mine without any syrup, but if you plan to do that, you might want to add a bit more sugar to the batter.
