Pot Roast...courtesy of '50s Prime Time Cafe at Disney Hollywood Studios
Ingredients:
5 lbs top or bottom round roast 1 onion, diced 2 carrots, peeled and diced 2 cloves garlic, minced 1 stalk celery, diced Salt and pepper to taste 7½ cups beef bouillon ¼ cup olive oil
***
1. Preheat oven to 350º. Heat the oil in a large pan over medium-high heat. Brown the meat on all sides and remove the meat to a roasting pan.
2. Sauté the cut vegetables until golden brown and add to the roasting pan. Pour the beef bouillon into the pan to lift off all of the caramelized vegetables and beef. Pour liquid over the roast and cover. Cook 30 to 45 minutes per pound.
3. Remove from oven and let rest for 15 minutes. Serve with your favorite starch and enjoy!

This sounds so simple - hard to believe it comes out so amazing! Might try this in the crockpot.

It is easy, but how hard can pot roast be? Of course, sometimes things taste "amazing" just because you're in a place you love!

I've eaten many a pot roast that didn't come out tender and juicy. The key is cooking it long enough, but not too long.
