~ Couscous ~* This is a very easy and healthy side dish. Goes great with Shish Kebabs.1/2 onion, chopped 4 - 5 mushrooms, chopped (optional) 2 T. olive oil 1 T. butter 1 cup broth (either beef, chicken, or vegetable - whichever goes best with what you're serving) 1/2 tsp. salt 3/4 cup plain couscous Heat oil in a small saucepan. Add onion and cook until translucent. Add mushrooms and saute until soft. Melt the butter with the onions and mushrooms and then add the broth and salt. Cover and bring to a boil. Add the couscous, stir, cover, and take off of the heat. Let sit for about 5 minutes and fluff with a fork.
