Cheese Sauce
3 tablespoons butter 3 tablespoons flour ¼ teaspoon salt black pepper to taste ¼ teaspoon nutmeg 1 ½ cup milk 1 cup old cheddar cheese (sometimes I like to substitute in smoked cheddar and other various cheeses)
Additional Ingredients 2 cups macaroni noodles 1 cup broccoli (optional)
1.Melt butter in pan. 2.Add in flour and salt, mix well. 3.Add in black pepper and nutmeg. 4.Add milk, stir constantly. 5.Heat for about 5 minutes until sauce starts to bubble. 6.Lower heat and add cheese, mixing well until completely melted. 7.Cook the noodles and broccoli while preparing the sauce. 8.Add the broccoli to the sauce. 9.Once the sauce is completed it can be directly added to the macaroni and eaten right away.

Do you mean old cheddar cheese that has been sitting around in the fridge or can you actually buy "old cheddar" in the grocery store? Don't think I've ever seen it. Sounds delicious!

Sounds delicious! lol, I mean Old Cheddar Cheese you buy in the store. Maybe it is a Canadian thing. Any kind of cheddar would work but I like the stronger taste of the Old Cheddar.

Is that the same thing maybe as Sharp Cheddar? I assume a cheese is more sharp becaues it's older.

In NH we have: mild cheddar, sharp & extra sharp & farmer's sharp or hunter's cheese. We get a lot of specialty cheeses, cheddar & goat in particular, due to all the small dairy farms & larger co-ops. A lot of these cheeses only are for sale at farmstands, church sales, small general stores or crafts shows Cabot (VT co-op) has 'reserve' sharp which is pricey but to die for I imagine there must be some amazing cheeses in Australia Car. Sounds good LLD! I like that you put a bit of nutmeg in the sauce ;D
