1 1/2 lbs carrots, sliced 3/4 cups margarine 3 large eggs 1/4 cup flour 1/2 tbsp baking powder 1 1/2 cups sugar ( you can reduce to about 1 cup without it messing up the recipe) 1/8 tsp ground cinnamon Cut and peel carrots into big slices. Cook them in boiling water to cover for 15 mins or until tender; drain. (You can do this the day before your party). Position the knife blade in food processor bowl; add carrot, butter, and remaining ingredients and process until smooth, stopping once to scrape down sides.
Spoon into 2 lightly greased 1 1/2 qt souffle or baking dishes.
Bake at 350F for 1 hour or until set and lightly browned. Serve immediately.

So different, have to try this. Thanks for sharing!
Bet this would be good with swt potatoes/yams, too.
I'd like to try the carrots as a savory souffle, too.
