This is a recipe we got during the Seneca Lake Deck the Halls Weekend last year, it's very easy and goes over well at New Year's; since I've gotten a ton of good responses here's the recipe. As usual, my variations on it will be below and thrown into the recipe itself.
3 Bean Delight
1/2 pound chopped beef (I use one pound of ground beef)
1 large onion or equivalent
1/2 pound bacon (I use a pound, everything's better with bacon)
1 tablespoon mustard
1/2 cup ketchup
1 tablespoon vinegar
1/2 cup brown sugar
1 can pork and beans (I use Campbells, brand doesn't matter)
1 can red kidney beans, undrained
1 can butter beans, undrained
1 cup pink wine- the recipe calls for Rock Stream Poolside Pink, from the winery where I got the recipe, but any sweeter pink wine will work
In a large pot, fry the bacon and set aside, leaving the drippings in the pot. Brown the beef and onions in the drippings. Put the bacon back in along with the rest of the ingredients and simmer 40 minutes, stirring occasionally.
I listed most of the things I did differently already; the recipe actually says to brown the beef and onion then do the bacon but I like this way better, leaves more flavor in. Once the beef and onion are cooked you can also put everything in a crock pot on High for 40 minutes to finish cooking. This also freezes very well and is good on its own or as a dip with tortilla chips, I'd suggest the Scoops chips to make it easier to eat.
