I LOVE Egg McMuffins but man, they dip the muffins in butter (used to work at a Mickey D's, incidentally, they do this to the biscuits at KFC, too) & who needs that?This is filling & QUICK
1. 1/4 to 1/3 cup egg substitute ie Egg Beaters
2. 1 slice Jones ham slices--these come in a small pack, they're thin & about 3 inches across or use diet sausage patties
3. 1 slice diet cheese--I use 2%
4. 1 Light English muffin
Put the sliced English muffin in to toast
In a glass or ceramic muffin cup, coat w/a non-stick spray
Pour in yr egg substitute
At this time I like to add S&P, hot sauce, a drop or 3 of Worcestershire sauce
My microwave takes about 55 seconds to cook the egg up nice & fluffy
Micro the ham slice. It shouldn't take anymore than 15 seconds or so. Watch out, it can spit! ;D
I also take scissors (a fave kitchen tool here) & cut up the ham for less messy eating.
Everyone knows how to assemble one.
My favorite way? muffin, cheese, hot ham, then egg, voila! muffin.
Extras: well like any omelet, sauteed onions, bell peppers, asparagus, 'shrooms
Leftovers: crab meat, salmon etc
1/4 c egg substitute (I use a store brand) : 30 calories
1 light English muffin (again a store brand): 90 calories
1 slice Kraft 2% white American cheese: 45 calories; others are less
1 Jones Ham Slice: 25 calories
Total: 190 calories
To get the calorie count lower use WW cheese slices or skim cheese
When roaring hungry
I use 2 slices of diet bread for a total of 70 calories & 1/3 a cup of egg substitute zapped in a small, shallow fruit bowl
