If you want a good, tasty stuffing dish that will go with anything this one doesn't take much effort and is a nice change from just opening a box, dumping and heating
½ cup chopped onion ½ cup chopped celery 4 Tablespoons butter or margarine 1 17-ounce can cream-style corn ½ cup water 1 teaspoon poultry seasoning ½ teaspoon black pepper 1 8-ounce package herb seasoned stuffing mix (Pepperidge Farms) 3 slightly beaten eggs ½ cup butter or margarine, melted
Cook the onion and celery in the 4 Tablespoons butter until tender but not brown. Add the can or corn, water, poultry seasoning and pepper and bring to a boil. Place the stuffing mix in a large bowl. Pour hot mixture over stuffing mix and toss lightly. Stir in the eggs. Shape into 7-9 balls in a 9”x9”x2” pan. Pour the melted butter on top. Refrigerate, if desired, over night or until ½ hour before needed. Bake at 375 for 25 minutes.
