~ Chicken Lo Mein ~
3 - 4 chicken breasts, diced
2 teaspoons sugar
1 tablespoon white vinegar
1/4 cup soy sauce
Combine the ingredients above in a ball and place in the refrigerator for about an hour. When you're ready to begin cooking, combine the following:
1 cup chicken broth
1/4 cup water
1 tablespoon sesame oil
2 teaspoons sugar
1 tablespoon white vinegar
3 tablespoons soy sauce
1/2 teaspoon black pepper
Thicken with 2 tablespoons of cornstarch (mix the cornstarch with a small amount of the sauce in a separate dish and then add to the rest). Set aside.
Cook one pound of spaghetti. Be sure not to overcook it as a little "bite" to the pasta makes this dish even better.
Heat some oil in a wok or skillet and cook the chicken. Place in a bowl. You can use any vegetables that you and your family enjoys. I used a yellow onion, 3 cloves of garlic, and 1 carrot that I shredded. Saute your veggies in a small amount of oil. Add the chicken back to the pan. Add some ginger (dried or fresh) and the sauce you made. Let the mixture bubble and thicken for a few minutes. Add the cooked spaghetti to the pan and mix thoroughly.

I love lo mein. Is spaghetti what they really use?

No, they use Chinese egg noodles I believe. But, spaghetti works really well instead. And has just about the same texture.
