This is one of Viv's recipes- as usual, easy to make and delicious!!!
Cod fillets, 2, about a pound Green pepper Yellow onion Tomato (we don't put it in as neither of us like it but it does go if you like them) Garlic, 2-3 cloves to taste Splash of lemon juice Mozzarella cheese to coat
Preheat oven to 350 Spray 13x9 pan with nonstick spray, we usually use a glass dish Lay cod out, skin down, splash with lemon juice (NO Real Lemon, in case Chuck sees this) Sprinkle crushed garlic on top of cod Cut up vegetables to bite size pieces, mix and cover fish with mixture Cook for about 25 minutes or until fish is cooked through Pull out of oven and sprinkle enough mozzarella to cover but not smother Put back in oven for about 5 minutes or until cheese melts
As a side we usually do linguine or another long pasta with garlic butter.
