This yields one loaf, and was scaled down from the original of 2 loaves.
1-1/4 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon ground cinnamon 1/2 cup quick cooking oats 1/4 cup and 2 tablespoons honey 2 tablespoons and 2 teaspoons vegetable oil 1 eggs 1/4 cup milk 1/2 cup craisins
Preheat oven to 350 degrees. Grease loaf pan(s). In a medium bowl, stir together flour, baking powder, baking soda, salt, cinnamon, and oats. In a large bowl, mix together honey, vegetable oil, eggs, and milk. Mix in flour mixture until just moistened. Stir in cranberries and walnuts. Put into loaf pan(s). Cook for 40 to 45 minutes, or until a tester inserted in the center of the loaves comes out clean.
