You could use other fish for this but I like the more bland sorts. Also, being on a perpetual diet, I will make a meal of this w/ a side of greens. This is my recipe, been doing this one for years If you want to get fancy substitute preserved lemons & add some cool olives. You know from the olive section at the deli 1. 1 lb thick cut halibut or cod if the fish has a thinner part, simply tuck it under. It'll bake evenly. 2. Butter Buds--or real butter--or olive oil 3. 1 med onion sliced 4. 1 large lemon, thinly slice half & put aside the rest 5. Dill 6. S&P to taste 7. Paprika, sprinkling 8. Clam juice or water, just enough to cover the bottom of yr baking pan Optional: diced tomato, drain the can or slice a fresh one Set oven to 425F In a shallow baking dish--spray w/cooking spray. Add clam juice or water Put in fish Sprinkle on S&P, Butter Buds--or dab on butter--or drizzle w/olive oil Sprinkle on paprika, dill (& hot sauce, if desired) Pile on sliced onions & lemon slices Pop in oven for about 15 - 20 minutes Voila!
