FLAT BREAD 1kg White Flour (preferably bread flour) 14g Dried Yeast 30g Salt 30g Sugar 1 Pint tepid water 1 can chickpeas drained 1 tbs coriander seeds 1 tsp cumin seeds or powder 1. Make well in flour 2. Add yeast, sugar and salt 3. Gradually pour in tepid water and draw the flour into the middle until soft dough forms 4. Knead the dough till smooth 5. Put drained chickpeas coriander seeds and cumin powder or seeds in bowl and crush 6. Add to dough and knead to incorporate into dough 7. Cut into small patties then roll into shapes about 1.4 inch thick 8. Cook on shelf in oven 400F for 5 - 8 mins
