~ Cracker-Crusted Dijon Fish ~

Ingredients
1 egg, slightly beaten 1/4 c. Dijon mustard 1 tsp. thyme 3/4 c. crackers, crushed 6 fish fillets 2 T. butter, melted
Preheat over to 400 degrees. In a small bowl, mix egg, mustard, and thyme. On a dinner plate, even spread cracker crumbs. Dip fish into mustard mixture first, then dredge in cracker crumbs and place on an ungreased cookie sheet. Drizzle butter evenly over the top and cook for 10 - 15 minutes or until golden brown, turning fish once.
