Prep time: 10 minutes Cook: 4 to 5 hours (Low setting) Makes: 6 servings
Ingredients: 3-1/2 cups vegetable broth 1-1/2 cups converted rice (Uncle Ben's) 6 thick center-cut pork chops 1 tablespoon seafood seasoning 2 cans (10.7 ounces each) condensed cream of celery soup (Campbell's) 2 cups frozen chopped green peppers 1 packet (1-ounce) onion soup mix 1 tablespoon Cajun seasoning
Directions:
1. In a 5-quart slow-cooker, stir together vegetable broth and rice until combined. Sprinkle both sides of pork chops with seafood seasoning. Place chops on top of rice in the slow cooker.
2. In a large bowl, stir together celery soup, peppers, onions, soup mix, and Cajun seasoning until combined. Pour over chops in slow cooker.
3. Cover and cook on Low heat setting for 4 to 5 hours.
Note: I usually serve with corn bread.......
