I originally got this, years ago, from AOL's 'Crockpot Cookin' Moms On Line
It comes from a Betty Crocker supermarket magazine
A real family favorite!
‘Thai’ Chicken
1. 8 chix thighs—skinless-----------------------------------14 thighs
2. ¾ cup hot salsa-------------------------------------------2 cups salsa
3. ¼ cup peanut butter------------------------3/4 cups peanut butter
4. 2 tablespoons fresh lime juice---------------------1/4 cup lime juice
5. 1 TBSN soy sauce (Kikkoman) or fish sauce-----1/4 cup soy sauce
6. 1 teaspoon grated fresh ginger root------4 teaspoons ginger
Condiments & Garnishes
rough chopped peanuts—we use unsalted dry roast
chopped cilantro, diced fruit, scallions etc
In crock pot: mix 2 – 6
Add chicken thighs, mix well
Cook on Low 8 – 9 hrs
Shopping List
1. salsa
2. peanut butter--creamy or w/nuts, whatever you prefer
3. Kikkoman soy sauce
4. fresh ginger root
5. 4 – 6 limes
6. fresh Cilantro
7. dry roast peanuts
8. cream of cocoa nut
9. Jasmine rice
10. Fresh fruit
11. 1/2 & 1/2 or light cream. I use fat free
Serve With
Jasmine rice (lrg reasonably priced bag store brand) cooked in Cocoa nut Milk. Add equal amounts of skim milk (or fat free 1/2 & 1/2) to fully fatted Cream of coconut—the heavy, more expensive, can—but goes twice as far
Or soak some unsweetened cocos nut flakes (health food section) in milk or cream to make your own cocoa nut milk
I use skim half & half for this
Fresh fruits—mango slices, fresh pineapple, kiwis, cantaloupe etc
