~ Pecan-Crusted Chicken Tenders ~
* This recipe comes from Rachael Ray's Get Real cookbook. I changed the amounts since it makes a lot. The chicken does come out a bit spicy, so adjust the cayenne pepper to your liking (or leave it out). You could also bake these instead, but not sure how well they'd come out. If someone tries baking them, let us know!
Ingredients
1 lb. chicken breast, cut into tenders 1 cup pecans, ground in the food processor until it's the consistency of bread crumbs 1/4 tsp. cayenne pepper 2 eggs, lightly beaten oil and butter salt and pepper
In a shallow dish, combine the ground pecans and cayenne pepper. In another shallow dish, place the lightly beaten eggs. Put the chicken tenders in the eggs, coating them completely. Then place the chicken in the pecan mixture and coat completely.
Heat a large skillet with the oil and butter (or just the oil if you'd rather) over medium heat. Brown the tenders on both sides and cook until no longer pink. While in the skillet, sprinkle with salt and pepper.
