3 oz. multi grain pasta (the one you choose may vary nutritionals some)
1 cube chicken bouillon
2 cloves garlic, minced
1/2 cup sliced zucchini
1/2 cup sliced yellow squash
1/4 cup finely chopped green onions
2 tbsp. chopped fresh basil
2 tbsp. dry white wine
1 tbsp. olive oil
1 can water-packed tuna, drained and flaked
1/2 large tomato, diced
1 tbsp. grated parmesan cheese
Instructions
changes I made to It...we did 1/4 wine and 2 cans of diced Hunts flavored tomatoes.. I love the sweet onion flavored ones. and I also used basil flavored olive oil. We didn't add the cheese ( less calories) for the pasta I used multi grain rotini( spiral) and we used the entire box so there's leftovers for lunches.
Cook pasta according to package directions, using bouillon in water instead of salt. Spray a non-stick skillet with cooking spray and heat over low heat. Add garlic and cook until it's fragrant, 1-2 minutes. Add green onions, squash, and basil. Cook about 3 minutes, until beginning to soften, stirring occasionally. Add wine and cook until liquid is mostly reduced away. Add oil, stir everything to form a light "sauce", add pasta, tuna, and tomato, and toss to coat. Cook until just heated through, and serve with 1/2 tbsp. of cheese on each serving.
Special Notes
This doesn't make a HUGE serving, but it's got a lot of protein (about 26 grams per serving) and fiber (about 8 grams per serving) so it's very filling. If you don't have wine on hand, you could use an equal amount of chicken broth or tuna-water instead. This is really, really good!
