~ Skillet Pizza ~* Courtesy of Saving Dinner by Leanne Ely - I purchased this cookbook while we were living in Australia and we went through many of the recipes. I put two stars next to the ones that we really loved and those are the ones that I'm sharing on this site with everyone. I'd forgotten about most of these meals so this has been great for me! So excited to try out some of our old favorites. Ingredients1 lb. ground beef 1 onion, chopped 1 c. oats 1/2 small red bell pepper, chopped 2 garlic cloves, minced 1 c. mushrooms, chopped (optional) 1 jar spaghetti sauce 1/2 c. flour 1/2 c. milk 1 egg 1 c. mozzarella cheese, shredded salt, pepper, and garlic powder In an overproof skillet, cook beef and onions over medium-high heat, till beef is done. Drain grease and blot with paper towel. Add oats and mix well. Add the pepper and spaghetti sauce and simmer on low about 5 minutes. In a bowl, whisk together flour, milk, egg, and spices until well blended. Add 1/2 cup of the cheese to the mixture. Sprinkle remaining cheese evenly over the top of the meat mixture in the skillet, then top that evenly with the batter. Place the skillet in the oven and bake 20 minutes or until golden. Let rest 2 minutes and cut into wedges to serve. * You can also just cook everything in a regular skillet and then layer as stated in a glass baking dish.
